
Making a granita is a legitimate excuse to stick your head in the freezer for a few seconds in the summertime. It’s also a chance to relive your childhood snow cone days while pretending to be classy and sophisticated. This was the first granita I’d ever made, and it was so simple and refreshing that there will definitely be more to come. All there is to do is blend some fruit together, pour it into a pan and freeze it. No special equipment or skills necessary.


Most recipes call for adding sugar to the blended fruit juice for added sweetness. Instead, I opted to add a couple nectarines to the watermelon, which really brightened the flavor and amped up the fruity, summery feeling of the dish.

Serves 3-4
What you need:
- 1/4 watermelon, cut into chunks
- 2 nectarines, pits removed and cut into chunks
- juice of 1/2 lemon
What to do:
- Blend watermelon in a blender until completely broken down
- Add the nectarines and lemon juice. Blend until everything is broken down.
- Strain the mixture through a fine mesh strainer into a baking dish (preferably glass).
- Stick in the freezer. Every 1/2 hour, open the freezer and stir the mixture with a fork, breaking up any big ice chunks. After a few hours, you should have a flaky, delicious treat.
- To serve, scrape up chunks with a fork into a glass and eat immediately. Optionally, garnish with some fresh mint.
Note: If you’re like me, and forget to stir it for over an hour, you can either try to shave the ice with a fork, or just let it sit out until the whole thing defrosts, and then start the freezing process over.

I just left the skin on. When you strain it, any pieces (including the skin) get taken out of the mix.
